Ingredients

1 small butternut squash cut in cubes (about 400 g = 14 oz)

1 espresso cup coconut sugar

1/2 espresso cup coconut oil

2 tbsp vanilla sugar

3 tbsp cinnamon

1 espresso cup water

Optional ( if you like the taste)

pinch of cardamom powder (green cardamom)

pinch of nutmeg powder

1 espresso cup = 1/2 cup = 50 g = 1.78 oz

  1. Mix well the butternut squash cubes with the coconut oil, water and the spices – vanilla sugar, cinnamon, cardamom powder, nutmeg powder – in a bowl
  2. Put the mixture into a skillet and roast them for 10-15 min, or until the butternut squash is soft.
  3. Add the coconut sugar and stir for 30-60 seconds until the coconut sugar is completely melted and begins to caramelize.
  4. Take off the stove and let it cool down.
