By the way, this cake came to be by accident. So, you know those days when your kid just refuses to eat what you slaved over? Yup, that was us with a bowl of oatmeal and yogurt. Two measly bites, and my little guy was done. I’m staring at this perfectly good mix, thinking, “No way this is fridge-bound for a slow death.” Plus, I’m that mom—fiber’s my daily crusade. Check out our 22 high-fiber foods list! So, I knew, he’s got to get those oats in, one way or another!

So, I’m rummaging through the pantry, just two egss in the frige, and boom—oatmeal chocolate cherry cake happened. Total accident, but oh my gosh, a happy one! I tossed in the leftover oats, and used my favorite base cake recipe. Mixed it up, baked it, and suddenly I’m a genius? Kiddo devoured it, fiber mission accomplished, and I’m over here sipping lukewarm coffee with this amazing, moist chocolate cake, feeling smug.
