Healthy Christmas snack – Mini oatmeal carrot cake

A healthy Christmas snack? How about a mini easy oatmeal carrot cake? Count me in! First off, it’s a delicious twist on the traditional holiday treats. The blend of oats and carrots not only adds a unique flavor but also packs a nutritional punch.

Oats are an excellent source of fiber, providing a steady release of energy to keep you going throughout the festivities. Plus, they’re heart-healthy, which is always a bonus. Carrots, on the other hand, bring a natural sweetness to the table and are rich in antioxidants, perfect for giving your immune system a little extra boost during the winter season.

Now, let’s talk about that refined sugar and flour-free aspect. It’s a win-win situation! By opting for alternative sweeteners and flours, you’re steering clear of the post-indulgence guilt while still indulging your sweet tooth. It’s a thoughtful choice that aligns perfectly with the season of joy and well-being.

Imagine savoring a slice of this guilt-free goodness with a warm cup of tea, coffee, or even sharing it with the little ones alongside a glass of milk. It’s a wholesome snack that not only satisfies your taste buds but also nourishes your body, making it an ideal treat for those holiday moments when you crave something sweet but want to keep it on the healthier side.

So, this Christmas, treat yourself to the joy of a scrumptious oatmeal carrot cake that’s not just a delight for your palate but a gift to your well-being. Who said healthy can’t be deliciously festive?

How To Make This Oatmeal Carrot Cake

The process is super easy and a great way to involve your kids in the kitchen as well – I made this with my 3-year old, he loves baking cakes, cookies and mixing the batter for pancakes. Here are the 4 steps:

Step 1: Preheat your oven to 350F or 180C

Step 2: Put all ingredients except the carrots into a bowl and blend until creamy with a hand blender. If you don’t have a hand blender, you can use a blender to process the batter.

Step 3: Stir in the carrots, line a 7×7 baking pan with parchment paper and spread the batter inside.

Step 4: Bake for 20-30 minutes or until a toothpick comes out clear after inserted into the cake.

Slice and enjoy!

Options

You can make some changes to this healthy Christmas snack if you don’t have the same ingredients. For example, feel free to use maple syrup if you can’t use honey or coconut oil if you don’t want to use butter.

You can also make this cake completely gluten and dairy-free by using gluten-free oats and coconut oil instead of butter.

Frosting for this Healthy Chrismas Snack

We like this carrot cake on its own, but if you’d like to make a super easy frosting grab some cream cheese, honey and vanilla, mix together and spread over the cake once it’s cooled off.
