It’s the perfect lunch idea or toddler snack idea that your little one will love, even if they’re picky eaters – this is the toddler meal that they’ll actually want to eat. We share here our secret thin crust oatmeal mini-pizza dough recipe.

We started a month ago a gluten-free diet which made us rethink many of our food habits. And honestly, it runs better than I thought. But one thing we all miss for sure is PIZZA. So, we needed to invent a new homemade gluten-free pizza to stop our cravings.
And it was simpler than expected! Also more delicious than we all have ever believed.
INgredients for our healthy oatmeal mini-pizza
You need 5 ingredients for our oatmeal thin crust pizza dough recipe:

- Oats, gluten-free (preferably), old-fashioned, rolled oats.
- Baking soda
- Olive oil
- Water
- Flax seed flour
You need 4 ingredients for the tomato sauce:
- Tomato
- Olive oil
- Fresh Basil
- Garlic
You need 2 ingredients for the toping if you do the simple mini-pizza Margherita (Margarita):
- Mozzarella
- Fresh Basil
Of course, you can add some other topings as you like.
We did also a Shrimp in Olive oil and Garlic variation.

Easy, healthy thin crust oatmeal mini-pizza Margherita with garlic shrimp variation
This healthy thin crust oatmeal mini-pizza Margherita is the perfect lunch idea or toddler snack idea that your little one will love, even if they’re picky eaters. This is the toddler meal that they’ll actually want to eat.
Ingredients
Oatmeal thin crust pizza dough recipe:
- 1 cup oats, gluten-free, old-fashioned, rolled oats.
- 1 teaspoon baking soda
- 2 Tbsp olive oil
- 1/2 cup water
- 1/2 espresso cup flax seed flour
Tomato sauce:
- 1 big, fresh tomato
- 2 Tbsp olive oil
- fresh Basil
- 1-2 cloves garlic
- Optional: Salt to taste
Toppings for mini-pizza Margherita (variation with Shrimp):
- Mozzarella
- Fresh Basil
Variation with shrimp:
- Shrimp in olive oil and garlic
Instructions
- Blend all oatmeal thin-crust pizza dough ingredients together until you have a smooth sticky dough.
- Grease the mini baking tins well and then spread well the dough. The dough is pretty sticky, so you need to put some olive oil on your hands in order to be able to spread it on the mini baking tins (similar to panpizza form).
- Put the mini pizza dough in the oven (Medium High is 375° - 449° F (190° C - 232° C) and bake them until you have a nice crust. In my case this were 6 minutes.
- In the meantime, blend all tomato sauce ingredients together until silky smooth.
- Take the ready mini pizza dough out and add the tomato sauce with a tbsp.
- Add the toppings for mini-pizza Margherita or for the shrimp variation and bake until golden brown (Medium High 375° - 449° F (190° C - 232° C).
- Take out, and serve with fresh basil.
- Buon appetito!

Pizza has a rich history. A friend from Venice told us once a story, that pizza was the servants food during Renaissance. Rich people in Italy ate their meals on a flatbread, so the servants took the rests of their meals and heated up with cheese. What ever the story of pizza is, one thing is for sure – pizza is delicious.
